Η δημιουργία και παρασκευή συνταγών με υλικά από τη θάλασσα ήταν μία "νόστιμη" δραστηριότητα που έκαναν μαθητές του σχολείου μας στο σπίτι τους κατά τη διάρκεια της περιόδου που τα σχολεία ήταν κλειστά λόγω COVID-19. Η προτίμηση των μαθητών στις γαρίδες ήταν εμφανής.

Η συνταγή του Μάρκου
Markos’ linguine with shrimps
INGREDIENTS
½ kilo of frozen shrimps No 2
250 grams of linguini or lasagna
2 tomatoes
50 grams of butter
1 clove of garlic
1 medium size onion
50 ml of olive oil
20 ml of ouzo
salt and black pepper
lemon zest or some lemon juice
THE RECIPE
Defrost the shrimps and take out the heads and the shell. Boil them for 10-12 minutes.
Strain the broth and let it aside.
Drizzle the shrimps with the olive oil and add salt and pepper.
Add them in a hot pan. Saute them until the shrimps are red on both sides.
Let them rest on a plate.
In a deep pan on high heat add the olive oil and then the chopped onion.
Add the garlic and ouzo. Let it simmer.
When ouzo has been evaporated, add the tomatoes, finely chopped.
Add the shrimp stock and the pasta. Stir and let it simmer in medium heat for 10-12 minutes.
Occasionally stir the pasta and when it is done, add the butter.
Withdraw the pan from the heat. Add the shrimps and the lemon zest.
Serve on a plate, decorate with the parsley.

Nick’s Easy Risotto with Shrimps
INGREDIENTS
2 cups of small size shrimps (fresh or frozen)
1 cup of rice
2 cups of vegetable stock (for more taste) or 2 cups of water
1 chopped red pepper
1 medium size chopped onion
2 crushed cloves of garlic
3 tablespoons of olive oil
½ glass of white wine
1 big, chopped tomato
salt, pepper, paprika
½ cup of chopped parsley
THE RECIPE
Add the olive oil, the onion and the garlic in a deep warm fry pan.
Stir for 2-3 minutes and then add the rice.
Stir for 4 more minutes and add the wine.
Add half of the stock, the tomato, salt, pepper and paprika, and let it boil.
When rice has absorbed most of the liquid, add the shimps and the rest of the stock.
Stir until the rice is ready.
Take the pan out of the heat, add the parsley and stir gently.
Serve on a beautiful plate and enjoy!

a leaf of basil
